Banana Chocolate Chip Muffins

Ingredients

  • 2 extra ripe bananas
  • 2 eggs
  • 1 cup brown sugar
  • 1/2 cup butter, melted
  • 1 tsp vanilla extract
  • 2 1/4 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1/2 cup walnuts, chopped

Directions

  1. Preheat oven to 350°F. Grease a 12-cup muffin pan or prepare pan using paper liners
  2. Peel bananas and place in a blender, purée.
  3. Transfer puréed banana to medium-sized mixing bowl and stir in eggs, sugar, melted butter, and vanilla etract. Stir until mixed thoroughly.
  4. In a large-sized mixing bowl, combine flour, baking powder, cinnamon, and salt. Blend well.
  5. Stir in chocolate chips and chopped nuts.
  6. Form a well in the center of the dry ingredients and then pour in the banana mixture. Mix until just barely blended.
  7. Spoon batter into each muffin cup until each cup is approximately 2/3 of the way full of batter.
  8. Place in preheated oven and bake muffins about 25 to 30 minutes or until the muffin tops reach a golden brown and a wooden toothpick inserted into the middle of one of the muffins comes out clean.
  9. Remove from oven and let cool for five minutes. Remove muffins from pan and serve muffins warm or cold. Yield: one dozen muffins
