Ingredients
- 2 extra ripe bananas
- 2 eggs
- 1 cup brown sugar
- 1/2 cup butter, melted
- 1 tsp vanilla extract
- 2 1/4 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup chocolate chips
- 1/2 cup walnuts, chopped
Directions
- Preheat oven to 350°F. Grease a 12-cup muffin pan or prepare pan using paper liners
- Peel bananas and place in a blender, purée.
- Transfer puréed banana to medium-sized mixing bowl and stir in eggs, sugar, melted butter, and vanilla etract. Stir until mixed thoroughly.
- In a large-sized mixing bowl, combine flour, baking powder, cinnamon, and salt. Blend well.
- Stir in chocolate chips and chopped nuts.
- Form a well in the center of the dry ingredients and then pour in the banana mixture. Mix until just barely blended.
- Spoon batter into each muffin cup until each cup is approximately 2/3 of the way full of batter.
- Place in preheated oven and bake muffins about 25 to 30 minutes or until the muffin tops reach a golden brown and a wooden toothpick inserted into the middle of one of the muffins comes out clean.
- Remove from oven and let cool for five minutes. Remove muffins from pan and serve muffins warm or cold. Yield: one dozen muffins
