Banana Protein Pancakes
Ingredients
- 1 large egg, cold
- 1 banana, chopped
- 1 scoop protein powder
- 1/4 cup almonds
Directions
- Place all ingredients except for the egg in a blender and mix for a couple of seconds to obtain a smooth and thick paste.
- Transfer to a bowl, add the egg and stir manually, to avoid obtaining a too fluffy composition. If the mixture is too thick, add some yogurt, almond milk or coconut milk. Do this progressively and keep in mind that the mixture has to resemble regular pancakes batter.
- Preheat a non-stick pancake pan and spoon 1/3 of the composition, cooking for 1 minute or until the pancake flips easily and is light brown. Cook on the other side and transfer to a plate, adding peanut butter or honey on the hot pancake.
- Repeat with the remaining composition. Depending on the size of the egg and banana, you should obtain 3 medium-sized pancakes. Serve warm or cooled, with peanut butter, honey or sliced bananas and chocolate chips on top!
