Belgian Waffles

Ingredients

  • 1 1/4 cup rolled oats
  • 1 egg
  • 1/2 cup whey protein powder, vanilla flavored
  • 1 Tbsp honey
  • 1 1/3 cups coconut milk
  • 1 tsp baking powder
  • 1 Tbsp coconut oil

Directions

  1. Place the oats in a blender and mix to obtain a fine flour, for about 30 seconds at medium speed. Add all the remaining ingredients except for the egg and blend to combine well.
  2. Separate the egg, add the yolk into the mixture and blend for 5-10 seconds to combine. Add the egg white into the mixture and pulse for 5 seconds or three pulses, to combine.
  3. Pour into the pre-heated waffle iron. Waffles should be ready when steam no longer rolls out. Be careful not to burn them.
  4. Remove waffles from the iron, top with honey and your favorite fruits and serve warm or cold!
