Berry Granola Sandwich Squares

Ingredients

  • 2 1/2 cups granola crumbs
  • 3 cups low-fat yogurt (Greek yogurt works perfectly)
  • 2 cups strawberries, fresh or frozen. *You can replace with raspberries or mix different types of berries for variation.
  • 1 tsp vanilla extract
  • 2/3 cup melted butter
  • 2/3 cup brown sugar
  • 1 tsp honey

Directions

  1. Preheat the oven to 350°F.
  2. Mix the granola crumbs, butter and sugar in a blender, until you obtain a thick composition.
  3. Line an 8-inch square baking pan with foil and add half of the granola composition, spreading evenly across the bottom of the pan.
  4. Bake for 10 minutes, remove the granola layer from the pan and set aside to cool. Do the same with the remaining composition, but don’t remove the layer from the pan once baked.
  5. Prepare the filling composition: in the blender, add all the remaining ingredients and mix until you obtain a smooth mixture.
  6. Pour this mixture over the granola layer in the baking pan and smooth it to the edges of the pan.
  7. Place the second granola layer on top and press gently, to obtain a sandwich-like dessert.
  8. Freeze until firm, for about 4 hours. Keep in the refrigerator between servings.
