Ingredients
- 2 16 oz cans of black beans, drained
- 3 cloves garlic, roasted
- 1/2 jalapeno chile, seeded
- 1/4 small onion
- 1 avocado, pitted, diced
- 1/4 cup tomato, chopped
- 3 Tbsp lime juice
- 1 Tbsp cilantro, chopped
- 1/4 cup olive oil
- pinch salt
- tortilla chips to serve with the hummus
Directions
- In a blender, add the beans, garlic, onion, salt, chile, lime juice and oil. Blend until you obtain a smooth puree. Add extra oil if composition is too thick, until the consistency is smooth.
- Spoon the mixture in a serving dish and top with avocado, cilantro and tomatoes. Serve on tortilla chips, pita or graham tortilla.
