Blender Breakfast Quiche

  • 3 large eggs
  • 1/2 cup Bisquick
  • 1/4 cup butter
  • 1 1/2 cup low-fat milk
  • 1/4 tsp salt
  • pinch fresh ground black pepper
  • 1/2 cup crumbled sausage
  • 4 oz cheddar cheese, shredded
  • 2 Tbsp crushed bread crumbs
  • cooking spray

  1. Place a skillet over medium heat, cook and crumble up enough sausage to make 1/2 cup
  2. Preheat oven to 350°F.
  3. In a blender, combine eggs, Bisquick, butter, milk, salt, and pepper. Process for 10 to 15 seconds or until completely blended.
  4. Spray a 9-inch pie pan with cooking spray then sprinkle crushed breadcrumbs evenly along the bottom of the pan.
  5. Pour egg mixture into prepared pie pan. Evenly sprinkle shredded cheddar cheese and crumbled sausage over the top of the quiche.
  6. Transfer quiche to preheated oven and cook for about 40 to 45 minutes or until the eggs have completely set and the cheese is golden browned. Let quiche cool for 5 minutes at room temperature.
  7. Slice quiche in half and then cut in half again. Place two slices of quiche onto each serving dish. Serve immediately.
