Bran Muffins With Cranberries


  • 1/3 cup skim milk, buttermilk or yogurt
  • 3/4 cup bran
  • 1/2 cup cranberries
  • 1 egg white
  • 3/4 cup bisquick
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 3 Tbsp sugar


  1. Preheat the oven to 400°F.
  2. Add all ingredients in the blender and process until you obtain a smooth paste.
  3. Coat 3 muffin cups with cooking spray and spoon the mixture evenly. Add a few drops of water on top of each muffin, to prevent scorching.
  4. Bake for 15-20 minutes or until
