Broccoli Cheese Soup
This recipe for broccoli cheese soup is both quick and easy. In as little as 10 minutes, you can have a healthy meal loaded with vitamins and nutrients. And, you might even convince someone who doesn’t like broccoli to give this a try. It’s that good!
Ingredients
- 1 cup of skim or 1-2% milk
- 2 cups broccoli, steamed
- 1/2 cup shredded cheddar cheese
- 1 tsp diced white onion
- 1/2 chicken or vegetable bullion cube
Directions
- Place all ingredients, reserving 1/2 cup of broccoli, into a high speed blender, like a Vitamix or Blendtec.
- Turn blender on at low speed and gradually increase to high.
- Blend on high for 5-6 minutes. Soup will become hot during blending due to the friction created.
- Reduce speed to low and remove lid plug from top.
- Drop remaining 1/2 cup of broccoli into container while running and allow it to blend for 5-10 seconds to create a chunky texture.
- Pour into bowls and garnish with additional cheddar cheese if desired.
