Broccoli Chicken Pies
Ingredients Broccoli Mixture
- 1 lb skinless chicken breast
- 1 onion, chopped
- 1 cup cheddar cheese, shredded
- 1 cup chopped broccoli
- 1 Tbsp olive oil
- 1/2 tsp salt
Ingredients Baking Mixture
- 1/2 cup milk
- 1/2 cup Bisquick mix
- 2 eggs
Directions
- Heat the oven at 350°F. Spray 12 muffin cups with cooking spray and set aside.
- In a nonstick skillet, heat the oil over medium heat and cook the chicken for 5-7 minutes, stirring occasionally. Add onion and cook for another 3 minutes or until onion becomes soft. Add broccoli, salt and pepper and continue stirring, cooking for 2-3 minutes more. Set aside and let cool.
- In a bowl, add the baking mixture ingredients and whisk manually until well combined. Spoon 1 tbsp baking mixture into each muffin cup.
- Move the broccoli mixture into a blender and mix for 1-2 minutes or until you obtain a thick paste. Spoon 1 tbsp of mixture into each muffin cup, on top of the baking mixture.
- Bake for 30 minutes or until toothpick comes out clean when inserted in the center of the muffins. Tops should be golden brown.
- Remove from the oven and let cool for 5 minutes, then loosen the sides of the pies and remove them from the cups. Cool for another 10 minutes and serve warm.
