Broccoli Chicken Pies

Ingredients Broccoli Mixture

  • 1 lb skinless chicken breast
  • 1 onion, chopped
  • 1 cup cheddar cheese, shredded
  • 1 cup chopped broccoli
  • 1 Tbsp olive oil
  • 1/2 tsp salt

Ingredients Baking Mixture

  • 1/2 cup milk
  • 1/2 cup Bisquick mix
  • 2 eggs


  1. Heat the oven at 350°F. Spray 12 muffin cups with cooking spray and set aside.
  2. In a nonstick skillet, heat the oil over medium heat and cook the chicken for 5-7 minutes, stirring occasionally. Add onion and cook for another 3 minutes or until onion becomes soft. Add broccoli, salt and pepper and continue stirring, cooking for 2-3 minutes more. Set aside and let cool.
  3. In a bowl, add the baking mixture ingredients and whisk manually until well combined. Spoon 1 tbsp baking mixture into each muffin cup.
  4. Move the broccoli mixture into a blender and mix for 1-2 minutes or until you obtain a thick paste. Spoon 1 tbsp of mixture into each muffin cup, on top of the baking mixture.
  5. Bake for 30 minutes or until toothpick comes out clean when inserted in the center of the muffins. Tops should be golden brown.
  6. Remove from the oven and let cool for 5 minutes, then loosen the sides of the pies and remove them from the cups. Cool for another 10 minutes and serve warm.
