Buttery Asparagus Soup

Asparagus has a lovely nutty quality that lends itself well to soups. This soup includes fresh lemon which really gets into the depth of the asparagus to reveal an additional layer of flavor


  • 4 cups asparagus, trimmed and chopped into 1/4 inch pieces
  • 1/4 cup lemon juice
  • 1 large onion, diced
  • 5 tbsp butter
  • 1/2 cup cream
  • 5 cups chicken broth
  • 1 tsp salt
  • 1 tsp black pepper


  1. Cook onion in butter in a heavy pot over low heat.
  2. Add asparagus and saute.
  3. Slowly add in remainder of ingredients except for cream and cook for 10 minutes over medium-low heat.
  4. Turn down heat and allow soup to simmer for another 15 minutes
  5. Use an inverted blender and puree soup.
  6. Add cream and blend.
