
Cauliflower and Mozzarella Soup
Cauliflower is one of those vegetables that can really take on any flavor. Combine cauliflower with cheese and its an instant match, but take that match one step further and soup it up. Pair your creamy soup with a salad and that makes for a quick, satisfying and comfy evening meal.
Ingredients
- 1 head of cauliflower chopped into florets
- 1 cup of shredded Mozzarella
- 1 cup Greek yogurt
- 500 ml chicken broth
- 500 ml water
- 1 onion
- olive oil
- 1 tsp sea salt
- 1 tsp paprika
Directions
- Saute diced onion in olive oil, add florets and saute for five minutes.
- Add water and chicken broth and simmer until soft and set aside uncovered for five minutes.
- Place the rest of your ingredients in a blender and mix until smooth.
- Add cauliflower mixture to blender and puree.
- Transfer back into cauliflower pot and let cook for 10 minutes.
