Cheddar-Broccoli Bites

Ingredients

  • 10 oz frozen broccoli, chopped fine
  • 8 oz whole kernel corn, drained
  • 1/4 cup white onion, chopped fine
  • 1/2 cup walnuts, coarsely chopped
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 eggs
  • 1/2 cup Bisquick
  • 1/4 tsp garlic salt
  • 1 cup cheddar cheese, shredded

Directions

  1. Preheat oven to 375°F. Grease a 9-inch square baking pan.
  2. Thaw and drain broccoli, then chop even finer.
  3. Drain corn and finely chop onion and coarsely chop walnuts.
  4. In a medium-sized mixing bowl combine broccoli, corn, onion, and walnuts. Mix well then place in the bottom of the greased baking pan.
  5. Place the milk, melted butter, eggs, Bisquick, and garlic salt into the blender. Blend on high for 15 seconds or until smooth, stopping every few seconds to scrape down the sides of the blender, if needed.
  6. Pour the blended mixture in pan on top of broccoli-mixture. Place in oven and bake for 20 to 25 minutes or until crust is a golden brown and center is set or until a knife inserted into the center comes out clean.
  7. Sprinkle with cheese. Place back in oven, baking for an additional 2 to 3 minutes or until the cheese has melted.
  8. Remove from oven and let cool for 30 minutes at room temperature.
  9. Cut into square- or triangle-shaped appetizers.
