Cherry Orange Almond Pudding
Ingredients for Fruits
- 4 1/2 cups cherries
- 3 Tbsp sugar
- 1/2 stick butter, unsalted
Ingredients for Batter
- 1 1/4 cups flour
- 1 3/4 cups sugar
- 2 eggs, beaten
- 1/3 cup flaked almonds
- 1/2 tsp baking soda
- 1 stick unsalted butter, melted
- 2 tsp baking powder
- few drops orange oil
- brown sugar to sprinkle over
Directions
- Preheat oven to 350˚F. Melt 1/2 of the butter into a large saucepan, add the cherries and sugar and cook on high heat, until the fruits begin to pop. Remove from the heat and set aside to cool.
- In a blender, mix the flour, baking powder and baking soda, sugar and eggs, orange oil and melted butter. Mix until smooth and pour 1/2 of the mixture into a round pie dish.
- Cover with the cherries mixture and top with the remaining batter.
- Sprinkle sugar and almond flakes on top and bake for 45-60 minutes or until the toothpick comes out clean and top is golden brown. Serve cooled!
