Cherry Orange Almond Pudding

Ingredients for Fruits

  • 4 1/2 cups cherries
  • 3 Tbsp sugar
  • 1/2 stick butter, unsalted

Ingredients for Batter

  • 1 1/4 cups flour
  • 1 3/4 cups sugar
  • 2 eggs, beaten
  • 1/3 cup flaked almonds
  • 1/2 tsp baking soda
  • 1 stick unsalted butter, melted
  • 2 tsp baking powder
  • few drops orange oil
  • brown sugar to sprinkle over


  1. Preheat oven to 350˚F. Melt 1/2 of the butter into a large saucepan, add the cherries and sugar and cook on high heat, until the fruits begin to pop. Remove from the heat and set aside to cool.
  2. In a blender, mix the flour, baking powder and baking soda, sugar and eggs, orange oil and melted butter. Mix until smooth and pour 1/2 of the mixture into a round pie dish.
  3. Cover with the cherries mixture and top with the remaining batter.
  4. Sprinkle sugar and almond flakes on top and bake for 45-60 minutes or until the toothpick comes out clean and top is golden brown. Serve cooled!
