Chicken Salad

Ingredients

  • 1 small sweet pickle
  • 3 oz fully-cooked boneless, skinless chicken breast, cubed
  • 1/2 tsp sugar
  • 1 pinch fresh ground black pepper
  • 1″ chunk of a white onion
  • 1/3 cup mayonnaise
  • 1 pinch salt

Directions

  1. Place pickle and onion in blender, process until finely chopped.
  2. Add in chicken and proceed with 3 short pulses.
  3. Add in sugar, salt and pepper,  and mayonnaise and press 2 more short pulses.
  4. Spread on bread or crackers and enjoy. Yield: 1 cup.
  5. For variation, try adding in chopped apple, dried cranberries. and chopped pecans or walnuts.
