Chocolate Potato Frosting
Ingredients
- 3 Tbsp cocoa
- 1 cup cooked sweet potatoes, peeled, chopped
- 1/4 cup chocolate, melted
- 1/4 cup agave nectar or honey
- 2 tsp vanilla
- 1/4 tsp salt
Directions
- Cook the potatoes in water until well cooked. Drain and set aside to cool. Meanwhile, melt the chocolate over a water bath or in the microwave.
- Place the potatoes into a blender and mix to obtain a thick composition. Add the melted chocolate and mix again a couple of times, to incorporate well.
- Add the remaining ingredients and blend for a few seconds to combine well. You should obtain a thick frosting. Refrigerate for 1 hour and serve on top of cakes, muffins or other desserts.
