Coconut Amaretto Bread


  • 4 oz tofu
  • 1 cup granulated sugar
  • 1/4 cup Amaretto
  • 14 oz coconut milk
  • 2 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1 Tbsp baking powder
  • 1 cup unsweetened flaked coconut


  1. Preheat oven to 350°F and grease a 9 x 5 x 3-inch loaf pan.
  2. In a blender, combine the tofu and sugar and blend until well combined.
  3. Add in the Amaretto and coconut milk and blend for 10 to 30 seconds or until well blended.
  4. In a medium-sized mixing bowl sift together flour, salt, and baking powder. Add in coconut flakes and stir to blend.
  5. Add the flour mixture to the blender and combine with tofu-mixture until smooth.
  6. Scrape batter into greased loaf pan and bake 45 to 50 minutes or until golden brown and set. Cool 5 minutes before turning out onto plate.
