Ingredients
- 4 oz tofu
- 1 cup granulated sugar
- 1/4 cup Amaretto
- 14 oz coconut milk
- 2 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1 Tbsp baking powder
- 1 cup unsweetened flaked coconut
Directions
- Preheat oven to 350°F and grease a 9 x 5 x 3-inch loaf pan.
- In a blender, combine the tofu and sugar and blend until well combined.
- Add in the Amaretto and coconut milk and blend for 10 to 30 seconds or until well blended.
- In a medium-sized mixing bowl sift together flour, salt, and baking powder. Add in coconut flakes and stir to blend.
- Add the flour mixture to the blender and combine with tofu-mixture until smooth.
- Scrape batter into greased loaf pan and bake 45 to 50 minutes or until golden brown and set. Cool 5 minutes before turning out onto plate.
