Creamy Tomato Soup

Making a creamy tomato soup is quite easy. You would have no idea how simple it can be once you try this recipe. All you need are a few spices, chicken broths, milk and cream, and of course the most important thing tomatoes. This tomato soup is great when paired with a grilled cheese sandwich.

Ingredients

  • 3 Tbsp butter
  • 2 Tbsp safflower oil
  • 2 large onions, chopped fine
  • 1/2 tsp thyme, crushed
  • 1 tsp dried basil
  • 1 pinch salt, to taste
  • 1 pinch fresh ground black pepper, to taste
  • 10 medium-sized ripe tomatoes, chopped coarsely
  • 5 Tbsp tomato paste
  • 1/3 cup all-purpose flour
  • 6 cup chicken broth
  • 1 1/2 tsp sugar
  • 1 cup cream
  • 1 cup milk
  • 2 3/4 additional Tbsp butter

Directions

  1. Place a large soup pot over low heat and add butter. Once butter is melted, add chopped onion and sauté for 3 to 5 minutes or until onion is tender and translucent.
  2. Sprinkle thyme, basil, salt, and pepper over sautéing onions. Stir to mix.
  3. Stir in tomatoes and tomato paste and simmer for 15 minutes.
  4. In a separate bowl, blend together flour and an equal amount of chicken broth. Stir well until mixture is creamy and smooth. Add to tomato mixture and stir until well blended.
  5. Next, slowly add the remaining chicken broth while stirring constantly. Cover and simmer over low heat for 30 minutes, stirring occasionally to prevent soup from burning or sticking to the bottom of the pan.
  6. Remove from heat and let cool for 5 minutes.
  7. Finally, using small batches at a time, pour soup into a blender and purée until smooth.
  8. When all soup has been processed in blender, pour puréed soup back in pan and place over low heat. Reheat the puréed soup while stirring in the sugar, cream, and milk. Stir until creamy and smooth. Simmer for 5 minutes and remove from heat. Serve hot and add remaining butter just before serving.
