Egg-less Eggnog


  • 8 cup cold milk
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 1 3 oz package instant vanilla pudding
  • 1/2 tsp ground nutmeg
  • ground nutmeg, to garnish


  1. In a medium metal bowl, combine 1 cup of cold milk and the vanilla pudding mix. Using an electric hand mixer, mix until pudding mix is completely dissolved. Set aside to let thicken.
  2. Add the remaining 7 cup cold milk to the blender along with the brown sugar, vanilla extract, and 1/2 tsp nutmeg. Blend for 30 seconds or until smooth.
  3. Add the thickened pudding mixture to the blender. Blend an additional 60 seconds or until smooth.
  4. Pour into a pitcher and place in refrigerator to chill before serving.
  5. When ready to serve, pour into a drinking glass and garnish with a sprinkle of nutmeg.
