Egg-less Eggnog
Ingredients
- 8 cup cold milk
- 1/2 cup brown sugar
- 2 tsp vanilla extract
- 1 3 oz package instant vanilla pudding
- 1/2 tsp ground nutmeg
- ground nutmeg, to garnish
Directions
- In a medium metal bowl, combine 1 cup of cold milk and the vanilla pudding mix. Using an electric hand mixer, mix until pudding mix is completely dissolved. Set aside to let thicken.
- Add the remaining 7 cup cold milk to the blender along with the brown sugar, vanilla extract, and 1/2 tsp nutmeg. Blend for 30 seconds or until smooth.
- Add the thickened pudding mixture to the blender. Blend an additional 60 seconds or until smooth.
- Pour into a pitcher and place in refrigerator to chill before serving.
- When ready to serve, pour into a drinking glass and garnish with a sprinkle of nutmeg.
