First Lentil Soup

Lentils are a great source of protein among the many other nutrients they also host. Lentils are known to be gaseous so it is best to start with a little at a time and soaking them when helps ease digestion as well.

Ingredients

  • 1/2 cup red lentils
  • 1 small onion
  • 1 small carrot
  • 1 cup homemade vegetable stock

Directions

  1. Wash lentils in water and let them soak for 20 minutes.
  2. Finely chop onion and carrot.
  3. Place everything in a medium-sized pot and cook on high for 10 mins.
  4. Turn down heat to medium-low and simmer for 30 mins.
  5. Puree in blender after cooling.
