First Lentil Soup
Lentils are a great source of protein among the many other nutrients they also host. Lentils are known to be gaseous so it is best to start with a little at a time and soaking them when helps ease digestion as well.
Ingredients
- 1/2 cup red lentils
- 1 small onion
- 1 small carrot
- 1 cup homemade vegetable stock
Directions
- Wash lentils in water and let them soak for 20 minutes.
- Finely chop onion and carrot.
- Place everything in a medium-sized pot and cook on high for 10 mins.
- Turn down heat to medium-low and simmer for 30 mins.
- Puree in blender after cooling.
