Fruity Tortilla Pizzas

Ingredients

  • 4 small fat-free flour tortillas
  • 1 cup fat-free ricotta cheese
  • 1/2 cup lowfat cottage cheese
  • 2 1/2 Tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh kiwi fruit, sliced
  • 1 cup fresh pineapple, cut in chunks
  • 1 cup fresh blueberries

Directions

  1. Preheat oven to 450°F.
  2. Line a baking sheet with aluminum foil and very lightly spray the foil with nonfat cooking spray.
  3. Place tortillas on baking sheet and bake 3 to 5 minute or just until crisp.
  4. Add ricotta cheese, cottage cheese, 1 tbsp. brown sugar, and cinnamon in a blender. Blend until smooth.
  5. Spoon the cheese mixture onto the tortillas, dividing the mixture evenly among the four tortillas.
  6. Arrange the fresh fruit as desired on top of each tortilla. Sprinkle the remaining brown sugar over the fruit.
  7. Return the tortillas to the oven and continue baking 5 more minutes or until heated through.
  8. Serve immediately.
