Ingredients
- 4 small fat-free flour tortillas
- 1 cup fat-free ricotta cheese
- 1/2 cup lowfat cottage cheese
- 2 1/2 Tbsp brown sugar
- 1/2 tsp cinnamon
- 1 cup fresh strawberries, sliced
- 1 cup fresh kiwi fruit, sliced
- 1 cup fresh pineapple, cut in chunks
- 1 cup fresh blueberries
Directions
- Preheat oven to 450°F.
- Line a baking sheet with aluminum foil and very lightly spray the foil with nonfat cooking spray.
- Place tortillas on baking sheet and bake 3 to 5 minute or just until crisp.
- Add ricotta cheese, cottage cheese, 1 tbsp. brown sugar, and cinnamon in a blender. Blend until smooth.
- Spoon the cheese mixture onto the tortillas, dividing the mixture evenly among the four tortillas.
- Arrange the fresh fruit as desired on top of each tortilla. Sprinkle the remaining brown sugar over the fruit.
- Return the tortillas to the oven and continue baking 5 more minutes or until heated through.
- Serve immediately.
