Ingredients
- 1 can garbanzo beans, rinsed and drained
- 1 tbsp. fresh-squeezed lemon juice
- 1 clove garlic, crushed
- 1 medium white onion, chopped
- 1/2 small avocado, peeled and chopped
- 1 medium tomato, chopped
- 4 scallions, sliced thin
- 1 tbsp. canned green chiles, chopped
Directions
- Place garbanzo beans in the blender and process just until beans begin to break up.
- Blend in the lemon juice and crushed garlic. Pulse 2 to 3 short pulses until beans are slightly chopped.
- Add the onion to the blender, followed by the avocado and blend again until the mixture becomes chunky.
- Scrape mixture into a mixing bowl and stir in tomato, scallions, and green chiles. Mix well.
- Cover bowl and place in refrigerator to chill for at least 20 to 25 minutes before serving.
- Serve with tortilla chips or fresh vegetables.
