Groovy Guacamole


  • 1 can garbanzo beans, rinsed and drained
  • 1 tbsp. fresh-squeezed lemon juice
  • 1 clove garlic, crushed
  • 1 medium white onion, chopped
  • 1/2 small avocado, peeled and chopped
  • 1 medium tomato, chopped
  • 4 scallions, sliced thin
  • 1 tbsp. canned green chiles, chopped


  1. Place garbanzo beans in the blender and process just until beans begin to break up.
  2. Blend in the lemon juice and crushed garlic. Pulse 2 to 3 short pulses until beans are slightly chopped.
  3. Add the onion to the blender, followed by the avocado and blend again until the mixture becomes chunky.
  4. Scrape mixture into a mixing bowl and stir in tomato, scallions, and green chiles. Mix well.
  5. Cover bowl and place in refrigerator to chill for at least 20 to 25 minutes before serving.
  6. Serve with tortilla chips or fresh vegetables.
