Ingredients
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 cup chopped carrots
- 2 cups water
- 1 tbsp olive oil
- 4 Habanero peppers, seeded, minced
- 3 tbsp lime juice
- 2 tbsp white vinegar
- salt to taste
Directions
- In a pan, saute the onion and garlic until soft. Add the carrots and water and bring to a boil. Reduce heat and simmer until carrots are tender. Set aside to cool.
- Transfer the mixture to a blender, add the remaining ingredients and puree until smooth and thin. Serve at room temperature, with omelet, sandwiches, rice, pasta or meat dishes.
