Homemade Vegan Mayonnaise
Ingredients
- 1/2 cup filtered water
- 1 tsp mustard
- 1/4 cup raw cauliflower
- 1 cup cashews, soaked for 2 hrs
- 1/4 cup cold olive oil
- 1 tsp apple cider vinegar
- 1 tsp sugar
- 3 Tbsp lemon juice
- 1/2 tsp sea salt
Directions
- In a blender, mix the cashews, cauliflower and water until well combined.
- Add the oil and mix at low speed until you obtain a thick and creamy mixture.
- Stir in the mustard and vinegar, mix again for a few seconds on low speed.
- Incorporate the remaining ingredients and process until smooth, at low speed. Add lemon juice gradually, to taste.
- If needed, add more salt, lemon juice or mustard, until you obtain the desired consistency and taste.
- Refrigerate and serve with salads, potatoes or meat dishes.
