Homemade Vegan Mayonnaise


  • 1/2 cup filtered water
  • 1 tsp mustard
  • 1/4 cup raw cauliflower
  • 1 cup cashews, soaked for 2 hrs
  • 1/4 cup cold olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp sugar
  • 3 Tbsp lemon juice
  • 1/2 tsp sea salt


  1. In a blender, mix the cashews, cauliflower and water until well combined.
  2. Add the oil and mix at low speed until you obtain a thick and creamy mixture.
  3. Stir in the mustard and vinegar, mix again for a few seconds on low speed.
  4. Incorporate the remaining ingredients and process until smooth, at low speed. Add lemon juice gradually, to taste.
  5. If needed, add more salt, lemon juice or mustard, until you obtain the desired consistency and taste.
  6. Refrigerate and serve with salads, potatoes or meat dishes.
