Low-Fat Artichoke Dip


  • 1 cup Parmesan cheese
  • 12 oz can artichokes, packed in water, drained
  • 1 cup light mayonnaise
  • 2 large cucumberrs
  • 2 large green peppers
  • 1 dash garlic salt
  • 1 bunch celery
  • butter crackers to serve with the dip


  1. Place all ingredients in a blender, mix for 2-3 minutes or until you obtain a smooth paste. If the paste is too thick, add some olive oil or lime juice.
  2. Pour the mixture into a glass baking dish and bake at 350˚F, for 30 minutes or until bubbly.
  3. Serve warm or cold!
