Minute Mayonnaise


  • 1 large egg
  • 1 Tbsp vinegar
  • 1/2 tsp salt
  • 1/4 tsp dry mustard
  • 1/8 tsp paprika
  • pinch of ground red pepper
  • 1 cup vegetable oil, divided
  • 1 Tbsp lemon juice


  1. In a blender jar, combine the egg, vinegar, salt, dry mustard, paprika, and red pepper. Secure lid and blend for 5 seconds.
  2. With motor running on lowest setting, add in 1/2 cup oil through feed hole in lid. . If needed, use a spatula to scrape down the sides of the blender. Next, add remaining oil and lemon juice.  Process until desired consistency is reached.
  3. Mayonnaise can be stored in tightly sealed container for up to 4 weeks in the refrigerator.
