Spinach and Pepperoni Pizza

There are a lot of ways to make dough for a pizza. If you have a KitchenAid mixer, that’s a great method. For our household, that mixer sits in a cabinet and is very heavy, so many times it only comes out for very specific recipes. We tried making the dough for this Spinach and Pepperoni Pizza in our Vitamix blender and found it a big timesaver.

Our blender sits on our counter since we make a smoothie everyday and it takes very little of our limited counter space. If you’re like us, or have easy access to a strong blender, give this recipe a try!

Ingredients

  • 1/4 cup warm water
  • 1 tsp active dry yeast
  • 1 tsp honey
  • 1/8 tsp kosher salt
  • 1 1/2 tsp extra virgin olive oil
  • 3/4 cup all-purpose flour
  • 1/2 to 3/4 cup pizza sauce of choice
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup pepperoni, thinly sliced
  • 1/2 cup feta
  • 1/2 cup raw spinach leaves, stems removed and torn

Directions

  1. In a blender, combine warm water, dry yeast, and honey. Secure lid and pulse. Let yeast proof for 5 to 10 minutes.
  2. Next, add in salt, olive oil, and honey. Pulse until well blended. Allow dough to rise in blender jar (with lid in place) for 35 to 45 minutes or until the dough has doubled in size.
  3. Place pizza stone or pizza pan in the oven and preheat oven to 450°F. Transfer dough to a well floured or well oiled flat surface. Roll out and shape into a circle that is 1/4- to 1/2-inch thick. Dust cornmeal onto a paddle or cutting board. Place pizza dough onto cornmeal-dusted surface and spread out sauce in the center of  the dough (leaving about 3/4 of-an-inch of space around the edge of the dough). Next, place toppings on to the dough: begin by sprinkling the mozzarella cheese over the sauce. Spread out slices of pepperoni; toss on some torn fresh spinach, followed by some crumbled feta.
  4. Carefully slide prepared pizza dough onto preheated pizza stone or pan. Bake at  450°F for 8 to 10 minutes or until crust is golden brown and cheese is melted. Remove from oven and let cool for 3 to 5 minutes, then slice, serve, and enjoy!
