Pomegranate and Mint Vinegarette

I remember as a child sitting for at least an hour with a pomegranate and eating the little tiny shiny pomegranate beads one by one. Each burst of flavor of the fruit’s seeds is full of delicious, sweet, tangy flavor and that is why the pomegranate makes a delicious dressing.

Ingredients

  • 1 pomegranate
  • 1/2 cup pomegranate juice
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 3 mint leaves
  • 1/2 tsp sea salt

Directions

  1. Place all of your items except for the pomegranate in a blender and whisk, set aside.
  2. Take your pomegranate and cut off the top, make vertical cuts around the fruit and then let sit in water for 10 mins.
  3. Remove the rind and inner flesh of the pomegranate and you will be left with the seeds. Add those to your blender mixture and just give them a few pulses (you still want the seeds to be brilliant and whole on your plate).
  4. Enjoy over salad or seafood.
