Prosciutto on Flat Bread with Fava Bean Spread


  • 2 c. frozen or fresh fava beans
  • 1/2 small red or green apple, core removed
  • 2 tsp. lemon zest
  • 1 tbsp. lemon juice
  • 3 tbsp. extra virgin olive oil
  • 1/2 tsp. mustard of choice
  • 8 slices of flatbread
  • 8 sliced of prosciutto


  1. To begin, prepare spread by boiling beans in saucepan over medium-high to high heat for 3 minutes or until tender, but still firm. Drain and rinse beans in cold water.
  2. Place beans in blender along with the olive oil, lemon zest, lemon juice, half of the apple, and mustard. Blend until mixture becomes creamy, yet chunky.
  3. Spread the fava bean spread onto each slice of flat bread. Then to   p each slice of flatbread with a slice of prosciutto. You can always use other types of meat as the topping as well.
