Ingredients
- 2 c. frozen or fresh fava beans
- 1/2 small red or green apple, core removed
- 2 tsp. lemon zest
- 1 tbsp. lemon juice
- 3 tbsp. extra virgin olive oil
- 1/2 tsp. mustard of choice
- 8 slices of flatbread
- 8 sliced of prosciutto
Directions
- To begin, prepare spread by boiling beans in saucepan over medium-high to high heat for 3 minutes or until tender, but still firm. Drain and rinse beans in cold water.
- Place beans in blender along with the olive oil, lemon zest, lemon juice, half of the apple, and mustard. Blend until mixture becomes creamy, yet chunky.
- Spread the fava bean spread onto each slice of flat bread. Then to p each slice of flatbread with a slice of prosciutto. You can always use other types of meat as the topping as well.
