Roasted Cauliflower Soup

Cauliflower is one of those few vegetables that can hold its own in raw form and as a simple puree. Roasting the cauliflower and then mashing it up to create a creamy soup plays on the vegetables ability to be adaptive and flavorful in its many forms. The cheese adds the perfect compliment to an already perfect soup. This is a delicious roasted cauliflower soup recipe.


  • 6 cups cauliflower florets
  • 3 cloves garlic, minced
  • 2/3 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 tbsp flour
  • 1 tsp salt
  • 1 tsp paprika
  • olive oil


  1. Place cauliflower florets and garlic in roasting pan and drizzle with olive oil and roast for 20 minutes.
  2. Put cauliflower and garlic in blender and puree while adding milk.
  3. Gather dry ingredients and slowly add.
  4. Once all the other ingredients are emulsified, add cheese and continue to mix.
