Roasted Cauliflower Soup
Cauliflower is one of those few vegetables that can hold its own in raw form and as a simple puree. Roasting the cauliflower and then mashing it up to create a creamy soup plays on the vegetables ability to be adaptive and flavorful in its many forms. The cheese adds the perfect compliment to an already perfect soup. This is a delicious roasted cauliflower soup recipe.
Ingredients
- 6 cups cauliflower florets
- 3 cloves garlic, minced
- 2/3 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tbsp flour
- 1 tsp salt
- 1 tsp paprika
- olive oil
Directions
- Place cauliflower florets and garlic in roasting pan and drizzle with olive oil and roast for 20 minutes.
- Put cauliflower and garlic in blender and puree while adding milk.
- Gather dry ingredients and slowly add.
- Once all the other ingredients are emulsified, add cheese and continue to mix.
