Roasted Pepper Dip

Roasting red peppers gives them a delicious smoky flavor and they can be eaten with a sprinkle of salt and olive oil. Take this concept to the party level with a nice olive oil-based dip. The garlic brings out the sweetness of the peppers while the vinegar provides the perfect balance of tang. This is a delicious roasted pepper dip!

Ingredients

  • 5 red bell peppers
  • 2 carrots
  • 1 small diced onion
  • 2 garlic cloves
  • 1/2 cup olive oil
  • 1/4 cup rice vinegar
  • 1/2 tsp salt

Directions

  1. Remove seeds from red bell peppers and chop carrots 1/2 inch discs.
  2. Place peppers, carrots,  chopped onion and garlic in a roasting tray, drizzle with 3 tbsp olive oil and tightly cover with foil sheet. Roast for 25 minutes.
  3. Take the rest of your olive oil, vinegar and salt and whisk in a blender.
  4. Add the roasted vegetables and mix for another three minutes.
