Roasted Pepper Dip
Roasting red peppers gives them a delicious smoky flavor and they can be eaten with a sprinkle of salt and olive oil. Take this concept to the party level with a nice olive oil-based dip. The garlic brings out the sweetness of the peppers while the vinegar provides the perfect balance of tang. This is a delicious roasted pepper dip!
Ingredients
- 5 red bell peppers
- 2 carrots
- 1 small diced onion
- 2 garlic cloves
- 1/2 cup olive oil
- 1/4 cup rice vinegar
- 1/2 tsp salt
Directions
- Remove seeds from red bell peppers and chop carrots 1/2 inch discs.
- Place peppers, carrots, chopped onion and garlic in a roasting tray, drizzle with 3 tbsp olive oil and tightly cover with foil sheet. Roast for 25 minutes.
- Take the rest of your olive oil, vinegar and salt and whisk in a blender.
- Add the roasted vegetables and mix for another three minutes.
