Spinach Hummus

Spinach Hummus

Ingredients

  • 2 cup chickpeas, soaked and cooked ahead of time
  • 3 cup fresh spinach
  • 1/4 cup extra virgin olive oil (or more to taste and for preferred consistency)
  • 3 Tbsp tahini
  • 1 Tbsp lemon juice
  • 2 cloves garlic
  • Pinch to 1/8 tsp salt, to taste
  • Pinch to 1/8 tsp ground cumin, to taste
  • Pinch to 1/8 tsp ground oregano, to taste
  • Pinch to 1/8 tsp cayenne pepper, to taste
  • Pinch to 1/8 tsp fresh ground black pepper, to taste

Directions

  1. In a blender, combine prepared chickpeas, spinach, tahini, lemon juice, and garlic cloves. Blend until desired consistency is reached.
  2. Add in desired amount of seasonings until desired taste is accomplished.
  3. Slowly blend in olive oil until desired consistency is reached.
  4. Sprinkle with a pinch of cayenne pepper to garnish.
  5. Serve with crunchy bread, pita chips, pretzels, fresh veggies, or other excellent foods for dipping.
  6. Yield: 2 1/2 c.
