Ingredients
- 2 cup chickpeas, soaked and cooked ahead of time
- 3 cup fresh spinach
- 1/4 cup extra virgin olive oil (or more to taste and for preferred consistency)
- 3 Tbsp tahini
- 1 Tbsp lemon juice
- 2 cloves garlic
- Pinch to 1/8 tsp salt, to taste
- Pinch to 1/8 tsp ground cumin, to taste
- Pinch to 1/8 tsp ground oregano, to taste
- Pinch to 1/8 tsp cayenne pepper, to taste
- Pinch to 1/8 tsp fresh ground black pepper, to taste
Directions
- In a blender, combine prepared chickpeas, spinach, tahini, lemon juice, and garlic cloves. Blend until desired consistency is reached.
- Add in desired amount of seasonings until desired taste is accomplished.
- Slowly blend in olive oil until desired consistency is reached.
- Sprinkle with a pinch of cayenne pepper to garnish.
- Serve with crunchy bread, pita chips, pretzels, fresh veggies, or other excellent foods for dipping.
- Yield: 2 1/2 c.
