Spinach Omelet


  • 4 eggs
  • 4 slices cheese
  • 1/2 onion
  • 1/2 cup spinach
  • salt and pepper to taste
  • butter


  1. Place all ingredients in a blender and pulse until ingredients are roughly chopped and well combined.
  2. Pour into a buttered skillet and cook on both sides until well cooked.
  3. Serve warm, with ham, cheese and tomatoes.
