Tomato-Cucumber Salad


  • 5 large cucumbers, sliced
  • 2 10 oz containers cherry tomatoes, quartered
  • 1/2 red onion, chopped
  • 3/4 cup sugar
  • 1/2 cup vinegar
  • 2 Tbsp lemon juice
  • 1/2 tsp salt
  • 1 tsp fresh ground black pepper
  • 1 tsp Italian seasoning


  1. Prepare vegetables as directed.
  2. In a large glass bowl with lid, combine cucumber, tomatoes, and red onion.
  3. Combine sugar, vinegar, lemon juice, and seasonings in the blender. Blend until smooth.
  4. Pour the blended dressing over the veggies and toss to coat. Seal glass bowl with lid and chill in refrigerator for at least 4 hours. Stir every 45 minutes to coat the vegetables with dressing so that the dressing soaks in.
  5. When ready to serve, use a slotted spoon so that excess liquid is removed before placing on serving dishes.
