Veggie Burgers

Ingredients

  • 1 large carrot
  • 2 oz cheddar, cubed
  • 1 small courgette
  • 1 cup breadcrumbs, fresh
  • 1 small leek
  • 1 tbsp flour
  • 1 egg, lightly beaten
  • olive oil

Directions

  1. In a deep frying pen, heat a tbsp of olive oil.
  2. Chop the leek and fry until softened. Chop the courgette and carrot and add them in the pan together with the onion, cooking gently for 10 minutes or until soft. Transfer the cooked veggies into a large bowl and set aside.
  3. Put the cheese and parsley into a blender and chop until fine, then add them in the veggie mixture. Add 3/4 cup of breadcrumbs and mix by hand.
  4. Take 1/2 of the mixture and form 2 large burgers, dip them in flour and the beaten egg and top with breadcrumbs.
  5. Fry in the pan for 5 minutes or until well cooked on each side. Repeat with the remaining mixture. Serve warm or cold.
