
Walnut-Crusted Chicken
Ingredients
- 2 slices whole wheat bread, torn into small pieces
- 1/3 cup Parmesan cheese, finely grated
- 1/2 cup egg whites, beaten until frothy
- 1/2 cup crushed walnuts
- salt and pepper, to taste
- 4 boneless, skinless chicken breast halves
Directions
- Preheat oven to 425°F.
- In a blender, combine bread and walnuts. Blend until finely crushed and well blended.
- Next, add to the walnut mixture the cheese and a pinch each of salt and pepper. Blend until mixed well.
- Wash chicken and pat dry.
- Pour walnut mixture into a shallow bowl.
- In a separate dish, beat egg white(s) until frothy.
- Dip one of the chicken breast halves into the egg white and then pat each side of the chicken breast in the walnut mixture. Place in a greased baking dish and repeat process with remaining chicken breast halves.
- Transfer to oven and bake for 35 to 45 minutes or until juices run clear.
- Remove from oven, let cool for 5 minutes at room temperature, then serve.
