Walnut-Crusted Chicken


  • 2 slices whole wheat bread, torn into small pieces
  • 1/3 cup Parmesan cheese, finely grated
  • 1/2 cup egg whites, beaten until frothy
  • 1/2 cup crushed walnuts
  • salt and pepper, to taste
  • 4 boneless, skinless chicken breast halves


  1. Preheat oven to 425°F.
  2. In a blender, combine bread and walnuts. Blend until finely crushed and well blended.
  3. Next, add to the walnut mixture the cheese and a pinch each of salt and pepper. Blend until mixed well.
  4. Wash chicken and pat dry.
  5. Pour walnut mixture into a shallow bowl.
  6. In a separate dish, beat egg white(s) until frothy.
  7. Dip one of the  chicken breast halves into the egg white and then pat each side of the chicken breast in the walnut mixture.  Place in a greased baking dish and repeat process with remaining chicken breast halves.
  8. Transfer to oven and bake for 35 to 45 minutes or until juices run clear.
  9. Remove from oven, let cool for 5 minutes at room temperature, then serve.
