Ingredients
- 1 cup skim milk
- 3/4 cup whole wheat kernels
- 1 cup berries of your choice
- 2 tbsp baking powder
- 1/4 tsp baking soda
- 1/4 cup cooking oil
- 2 eggs
- 1 tsp butter for topping, optional
- pinch salt, optional
- 2 Tbsp honey, optional
Directions
- In your blender, add the milk and kernels and mix until smooth, for about 3-4 minutes or more if needed.
- Add the remaining ingredients except for the berries and blend again for 30 seconds.
- Coat the pancakes pan with oil if needed. For a lighter meal, you can use a cooking spray. Turn the heat on and wait for a couple of seconds.
- Pour the mix on the hot pan and bake on each side until light brown.
- Remove from the pan and serve warm or cold, with berries on top. For a sweeter dessert, add honey and butter.
