Yellow Pepper Hummus
Ingredients
- 1 cup yellow bell pepper, chopped
- 12 oz can garbanzo beans, drained, rinsed
- 1/3 cup olive oil
- 1/4 tsp ground pepper
- 1/2 tsp ground cumin
- 3 Tbsp lime juice
- salt and pepper to taste
Directions
- Add all ingredients in a blender and mix until you obtain a smooth paste. Stop from time to time to scrape down the mixture from the sides if needed.
- Move to a serving dish, add salt and pepper to taste and refrigerate for 2 hours. Serve on top of pita, potato chips, crackers or tortillas.
