
Chicken Mullagawtawny
Chicken Mullagawtawny is an English interpretation of an Indian dish many explorers enjoyed while in the country. The soup is hearty, full of flavor and absolutely delicious.
Ingredients
- 1 green apple cored and diced
- 3 celery stalks, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup coconut milk
- 6 cups chicken broth
- 1/2 lemon, juiced
- 2 cups cooked and diced chicken breast
- 1 cup cooked rice
- 2 tsp Madras curry powder
- 1 tsp fresh ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp each paprika, salt, pepper
- olive oil
Directions
- In an earthenware pot, cook onions and garlic in olive oil and when translucent add celery and apples.
- After 5 minutes add remaining ingredients minus the rice, chicken and ground spices and cook covered for 20 minutes.
- Using an immersion blender, puree the mixture in pot.
- Add the rest of the ingredients and cook for another 15 minutes.
