Chicken Mullagawtawny

Chicken Mullagawtawny is an English interpretation of an Indian dish many explorers enjoyed while in the country. The soup is hearty, full of flavor and absolutely delicious.

Ingredients

  • 1 green apple cored and diced
  • 3 celery stalks, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup coconut milk
  • 6 cups chicken broth
  • 1/2 lemon, juiced
  • 2 cups cooked and diced chicken breast
  • 1 cup cooked rice
  • 2 tsp Madras curry powder
  • 1 tsp fresh ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp each paprika, salt, pepper
  • olive oil

Directions

  1. In an earthenware pot, cook onions and garlic in olive oil and when translucent add celery and apples.
  2. After 5 minutes add remaining ingredients minus the rice, chicken and ground spices and cook covered for 20 minutes.
  3. Using an immersion blender, puree the mixture in pot.
  4. Add the rest of the ingredients and cook for another 15 minutes.
