Ingredients
- 2 large eggs
- 1/8 cup fat-free or low-fat milk
- pinch of salt and fresh ground black pepper
Optional Additions
- 1/4 cup shredded cheese of choice
- 1/8 cup white onion, chopped
- 1/8 cup green bell pepper, chopped
- 1/4 cup fully cooked ham, cut into cubes
Directions
- Place a frying pan over medium heat and spray with cooking oil.
- In a blender, combine eggs, milk, and a pinch of salt and pepper. If using additional ingredients add all, except for cheese, to the blender now as well. Pulse until ingredients are well-blended.
- Transfer to preheated frying pan and cook eggs stirring frequently until eggs begin to solidify. If using cheese, stir in an 1/8 c. of the shredded cheese now. Continue to cook eggs until cheese is melted and desired texture is reached.
- Transfer to serving dish and sprinkle the remaining cheese over top of the eggs, if desired. Enjoy immediately.
