60 Second Scrambled Eggs

60 Second Scrambled Eggs


  • 2 large eggs
  • 1/8 cup fat-free or low-fat milk
  • pinch of salt and fresh ground black pepper

Optional Additions

  • 1/4 cup shredded cheese of choice
  • 1/8 cup white onion, chopped
  • 1/8 cup green bell pepper, chopped
  • 1/4 cup fully cooked ham, cut into cubes


  1. Place a frying pan over medium heat and spray with cooking oil.
  2. In a blender, combine eggs, milk, and a pinch of salt and pepper. If using additional ingredients add all, except for cheese, to the blender now as well. Pulse until ingredients are well-blended.
  3. Transfer to preheated frying pan and cook eggs stirring frequently until eggs begin to solidify. If using cheese, stir in an 1/8 c. of the shredded cheese now. Continue to cook eggs until cheese is melted and desired texture is reached.
  4. Transfer to serving dish and sprinkle the remaining cheese over top of the eggs, if desired. Enjoy immediately.
