Oatmeal Cottage Cheese Pancakes


  • 1/2 cup cottage cheese
  • 1/2 cup oatmeal, regular or gluten-free
  • 4 egg whites
  • 1 tsp vanilla extract or other flavor of your choice


  1. Add all ingredients in your blender and mix for 2-3 minutes or until you obtain a smooth composition.
  2. Spray a skillet with cooking spray or coat it with oil. *Some pancake pans don’t require coating at all and you can prepare “silver dollar” pancakes, which are smaller but less likely to stick.
  3. Cook the pancakes on each side until light golden. Top with your favorite  topping and serve warm!
