Ingredients
- 1/2 cup cottage cheese
- 1/2 cup oatmeal, regular or gluten-free
- 4 egg whites
- 1 tsp vanilla extract or other flavor of your choice
Directions
- Add all ingredients in your blender and mix for 2-3 minutes or until you obtain a smooth composition.
- Spray a skillet with cooking spray or coat it with oil. *Some pancake pans don’t require coating at all and you can prepare “silver dollar” pancakes, which are smaller but less likely to stick.
- Cook the pancakes on each side until light golden. Top with your favorite topping and serve warm!
