Ingredients
- 1 1/4 cup rolled oats
- 1 egg
- 1/2 cup whey protein powder, vanilla flavored
- 1 Tbsp honey
- 1 1/3 cups coconut milk
- 1 tsp baking powder
- 1 Tbsp coconut oil
Directions
- Place the oats in a blender and mix to obtain a fine flour, for about 30 seconds at medium speed. Add all the remaining ingredients except for the egg and blend to combine well.
- Separate the egg, add the yolk into the mixture and blend for 5-10 seconds to combine. Add the egg white into the mixture and pulse for 5 seconds or three pulses, to combine.
- Pour into the pre-heated waffle iron. Waffles should be ready when steam no longer rolls out. Be careful not to burn them.
- Remove waffles from the iron, top with honey and your favorite fruits and serve warm or cold!
