Chick Pea Soup
Chick peas have been a staple in Middle Eastern dishes for a long time, but now as many household kitchens go international the chick pea is gaining status as a hearty staple in the kitchen. This chick pea soup recipe includes a ton of flavor and using a Vitamix or Blendtec blender makes it extremely to make.
Ingredients
- 2 cans washed and drained chick peas
- 1 medium-sized onion, diced
- 4 cloves garlic, minced
- 1 green chili pepper
- 4 tomatoes, diced
- 1/4 cup tomato paste
- 3 tbsp lemon juice
- 1 tsp cumin
- 1 tsp cinnamon
- 1/2 tsp mustard powder
- 1 tsp salt
- 1/2 tsp black pepper
- olive oil
- 4 cups chicken broth
- 1 cup water
Directions
- Place onion, garlic, green pepper in blender and puree, add remaining ingredients except for chick peas and broth
- Heat oil in heavy pot and add blender mixture to oil.
- Stir and cook for five minutes in oil.
- Add chick peas and broth.
- Simmer covered on medium-low for 25 minutes.
