Watercress Soup

Although watercress is seasonal, this salad leaf is full of vitamins and minerals. That is why heath nuts crave and love it. The recipe below calls for little time, a few ingredients, and voila, you whip yourself up a tasteful treat. Try adding some foodstuff, if you prefer.

Ingredients

  • 1 lb frozen peas, thawed
  • 1 small bunch of watercress
  • 1/2 cup parsley
  • 1 1/4 veggie broth
  • 1/2 cup sour cream
  • salt and pepper to taste

Directions

  1. Mix all ingredients except for the sour cream in a blender, at medium and high speed, until well blended and smooth.
  2. If the soup is too thick, add some water and puree again to obtain the desired consistency.
  3. Transfer to serving dishes, add sour cream on top and serve!
