Pea Mint Soup
Ingredients
- 2 cups chicken broth
- 1 lb frozen peas
- 3/4 cup mint leaves
- 2 Tbsp unsalted butter
- 1 onion, chopped
- salt to taste
Directions
- In a medium saucepan, melt the butter over medium heat. Add all ingredients into a blender, pour the butter on top and mix to obtain a smooth soup. Pour into serving dishes and serve warm.
- You can also reserve 1/2 of the soup and blend only half of the mixture, then return the blended soup to the saucepan. This way you obtain a thicker soup.
