Pea Mint Soup


  • 2 cups chicken broth
  • 1 lb frozen peas
  • 3/4 cup mint leaves
  • 2 Tbsp unsalted butter
  • 1 onion, chopped
  • salt to taste


  1. In a medium saucepan, melt the butter over medium heat. Add all ingredients into a blender, pour the butter on top and mix to obtain a smooth soup. Pour into serving dishes and serve warm.
  2. You can also reserve 1/2 of the soup and blend only half of the mixture, then return the blended soup to the saucepan. This way you obtain a thicker soup.
