Chocolate Nut Fudge

Ingredients

  • 1 cup condensed milk
  • 2 cups sugar
  • 1 cup water
  • 85 g unsweetened chocolate, chopped
  • 1 cup chopped toasted nuts

Directions

  1. Spray a square baking pan with cooking spray. Add the chocolate into a blender and mix a few times to chop it finely.
  2. In a large saucepan, add the sugar and water. Heat at medium heat, bring to a boil and stir until sugar is dissolved.
  3. Boil for 1 more minute, then add the milk. Stir frequently to avoid crystallization and cook the mixture for 10 minutes or until it looks thick and smooth.
  4. Remove from the heat, set aside to cool for 15 minutes. Avoid stirring during this interval as the mixture will form sugar crystals.
  5. Add the chocolate into the mixture and stir until chocolate melts. With a wooden spoon, beat the fudge until it becomes thick and loses its gloss. You can also transfer all the mixture into the blender, without cleaning it previously, and mix a few times until the paste becomes thick. Still, avoid overmixing.
  6. Once the fudge is thick and begins to set up, stir in the nuts and pour the fugde into the pan. Allow to set at room temperature for about 3 hours or overnight. Cut into squares and serve cooled.
