Cucumber Soup

Cucumbers have long been used raw. However, there is more to this fruit, than being a part of one’s beauty regimen. Cucumbers are also rich in vitamin C and manganese. This quick to go cucumber soup procedure, will surely fill one’s tummy of its rich goodness.

Ingredients

  • 3/4 cup sour cream
  • 1/2 cup fresh basil
  • 2 jalapenos, seeded
  • 4 scallions, chopped
  • 1 Tbsp lime juice
  • 4 cucumbers, peeled, chopped
  • salt and pepper to taste

Directions

  1. Mix all ingredients in a blender to obtain a thick and smooth paste.
  2. Depending on the desired consistency, add some water or buttermilk and mix again until the soup looks as you want it to. Serve with bread, feta, salami and olives.
