Cucumber Soup
Cucumbers have long been used raw. However, there is more to this fruit, than being a part of one’s beauty regimen. Cucumbers are also rich in vitamin C and manganese. This quick to go cucumber soup procedure, will surely fill one’s tummy of its rich goodness.
Ingredients
- 3/4 cup sour cream
- 1/2 cup fresh basil
- 2 jalapenos, seeded
- 4 scallions, chopped
- 1 Tbsp lime juice
- 4 cucumbers, peeled, chopped
- salt and pepper to taste
Directions
- Mix all ingredients in a blender to obtain a thick and smooth paste.
- Depending on the desired consistency, add some water or buttermilk and mix again until the soup looks as you want it to. Serve with bread, feta, salami and olives.
