Elderflower Sherbet with Blueberries


  • 1/2 cup water
  • 2 cups buttermilk
  • 1 cup sugar
  • 3/4 cup milk
  • 1/4 cup elderflower cordial
  • 1/2 cup blueberries


  1. Prepare an ice-water bath. Add sugar and water into a bowl and bring to a boil, stirring until sugar is dissolved. Cook for about 2 minutes to obtain a thin syrup. Set aside and let cool at room temperature for a couple of minutes.
  2. Add the buttermilk, milk, cordial and sugar syrup in the blender and mix to obtain a smooth composition. Transfer it to a medium bowl and place in an ice-water bath, cooling completely.
  3. Pour the mixture into small containers, stir in the blueberries and freeze for about 1 hour or until firm. Serve cooled!
