Festive Pumpkin Soup

When one thinks of pumpkins, one often thinks of Halloween. Ah! Those jack o’ lanterns often decorated in the streets. However, there is more that you can do with this fruit. One of our favorites would be turning them in to soup.

Ingredients

  • 1/2 large butternut pumpkin
  • 2 potatoes
  • 2 carrots
  • 2 garlic clove
  • 1 white onion
  • 2 beef or vegetable bullion cubes
  • 1 Tbsp butter
  • pinch of salt

Directions

  1. To begin, scrub potatoes and wash carrots and then chop each vegetable into small pieces.
  2. Next, finely dice onion and garlic cloves.
  3. Fill a large sauce pan with just enough water to cover the potatoes, Place the vegetables in the water and place pan over medium-high to high heat. Add the bullion cubes to the water along with a pinch of salt. Bring to a boil and cook until the water has slightly evaporated and vegetables are tender, about 30 minutes.
  4. Place ingredients in a blender and blend until the ingredients turn into a thick soupy consistency without any lumpy vegetables.
  5. Add the butter, stir and serve.
