Turnip Soup Recipe
Turnips are one of those vegetables that are at the bottom of my list, and is the same for a lot of people I know. Turnips are naturally bitter, but when cooked correctly a natural sweetness flows through. I was very skeptical when I tried this recipe, but I was surprised that it was good to my palette. It wasn’t awesome, but I’d eat it again for the great health benefits.
Turnips have anti-inflammatory properties and are chock full of vitamins, making this a delicious and nutritious soup.
Ingredients
- 5 turnips, peeled and sliced
- 1/2 cup grated carrot
- 3 tbsp butter
- 1 onion, diced
- 2 cloves garlic, minced
- 3/4 tsp dried rosemary
- 1 tsp salt
- 1 tsp black pepper
- 4 cups chicken broth
Directions
- Heat butter in medium-sized pot and add onion and garlic. Cook for 3 minutes until translucent and fragrant.
- Add remaining ingredients, cover pot and cook for 30 minutes on medium heat.
- Transfer soup to a blender, and blend until smooth.
