Vitamix Broccoli Soup

Luckily, broccoli is not only delicious but is also very nutritious. It tastes great steamed, stir fried, baked, and just about any way it’s commonly cooked. You can now make it at home, very easily, as a Vitamix broccoli soup!

Broccoli is a good source of calcium and Vitamin K which are important for bone health and it also contains a good amount of potassium. This creamy broccoli smooth pairs the richness of the vegetable with Parmesan to create a palate-pleasing dish.

Ingredients

  • 4 cups steamed broccoli
  • 1 small onion, diced
  • 1/4 cup Parmesan
  • 1/2 cup cream
  • 3 tbsp butter
  • 2 cups chicken broth
  • 1 tsp salt
  • 1 tsp pepper

Directions

  1. Melt butter in medium-sized pot, add diced onion and cook until translucent.
  2. Add steamed broccoli and cook on low heat for 10 minutes.
  3. Place broccoli mixture in blender and mix.
  4. Slowly add cream, Parmesan, salt and pepper and mix until creamy.
